Cinnamon Lime Chicken


4 boneless skinless chicken breasts
1 teaspoon salt
½ tablespoon cinnamon
1 tablespoon olive oil
½ medium white onion, minced
2 cloves garlic, minced
Juice from 3 limes


  1. Heat oven to 400°F.
  2. Combine salt and cinnamon. Rub mixture into chicken breasts.
  3. Place chicken on baking sheet and cook in the oven until juices run clear (Approximately 15-20 minutes).
  4. Remove chicken from oven let cool
  5. While chicken is cooling, mince onion and garlic. Sauté in frying pan.
  6. Tear cooled chicken into thin strips.
  7. Place chicken in pan with onion and garlic. Add lime juice.
  8. Simmer for about 15 minutes or until hot.
  9. Serve by itself or in corn tortillas.
